Based on a recipe inherited from Monsieur Francis Chauveau, the executive chef of InterContinental Carlton Cannes, the chef at Azure has evolved the flavors of Southern France. Using carefully selected seafood of the day, this Azur dish is prepared with meticulous care and slow simmering to bring out its elegant and rich umami to the fullest.

Seasonal Soup

The chef’s soups are exceptional, prepared with great care and time using his own methods to draw out the full character of seasonal ingredients. One of the most popular is the new-season onion soup served from March to June, made without adding any water to concentrate its natural flavor.
